Most of these hotels have water purification systems.
And there are supermarkets (yes, there are supermarkets food markets and shopping malls in the DR) selling all brands of bottled water.
Don't believe the hype, I've lived in the DR most of my life, and while is true the quality of the water is far from what you can find in the US, Canada or the UK, is not like you are gonna fall to pieces if you wash you hands or take a shower with it, the water is used to cook to wash cars and clothes.
Used your common sense, don't drink out of a faucet, and I am sure hotels have bottled water, that is if they don't have water filters, after all how much can a gallon of water cost to this hotels who make big bucks with tourism.
This reminds me of an good American friend I met over the net, who asked me if I lived in a grass hut ala South East Asia style; after I spent a few minutes crawling on the floor laughing I mailed him some pictures of the city he was very surprised.
Sure the DR is poor, but there are many good services and infrastructures in the island, more than many Central American Countries I've being to.
