There's "La Kuora", the Spanish pronunciation to the English meaning "The Quarter". It's on the 30 de Marzo avenue in the capital. They only play salsa, including lots of old school salsa. Hope this helps.
El Sarten, on Calle Hostos in the Zona Colonial plays a variety of older and traditional music- including salsa, but also merengue and bachata. It's currently under renovation but should be ready in a week or so (as of 6/6/09, when I last passed by there).
