Default sightseeing

Can someone please list the sightseeing type things to do in the central area (not just in Santiago)....

Like Waterfalls/ lagoons/ caves?

Factory tours?

Donkey rides?

Farm Zoo's

Good (countryside) restaurants?

Any info from Locals would be great.
Also any Santiago Area TOur operator names/numbers would be great.

One nice trip is Salcedo - you can visit this small town, the Hermanas Mirabal museum, and do "la ruta del cafe" - a very enjoyable guided visit to the coffee growing area in nearby Jamao. The trip includes coffee, a choice of treks in the countryside - the longer ones include a swim in the river/waterfalls, explanation of the process, a small "museum" and a hearty Dominican lunch.

It is organised by Italian NGO UCODEP in coordination with the local coffee growers' association COSCAFE - Calle Profesor Regalado 5, Salcedo. Tel 809 577-1475.
