is there always a lot of available apartments to rent in cabarete from may to august?

As a general rule, the hotter summer months are low season in the DR. Tourists from Europe and the Northern US, vacation locally or don't travel far to find sunshine.
This may or not be the case in Cabarete specifically, as it is not just a beach vacation town but linked to the sport of kite surfing. But I know that street and beach vendors in and around Cabarete do find these months as s l o w .

Cabarete must differ from the places you're used to visiting (and vendors almost always complain there are no customers )

There's usually something available for rent, but it might not be what you want or in your price range. DR holiday weekends are usually full. You mentioned May to August, are you planning to rent for the entire time?

To give you a good idea of when high/slow seasons are you can check hotel rates. Most stick to almost the exact same schedule for raising/lowering their rates.
Here's are the rates for a popular oceanfront 2 bedroom condo for 2 people & the associated dates for the current year:

Sep 01, 2007 - Dec 15,2007...... $ 80/night
Dec 16, 2007 - Jan 06, 2008...... $155/night
Jan 07, 2008 - Jan 31, 2008...... $100/night
Feb 01,2008 - Mar 31, 2008...... $140/night
Apr 01, 2008 - Jun 15, 2008...... $120/night
Jun 16, 2008 - Aug 31, 2008...... $140/night

In summary for Cabarete:
Feb-Mar & Jun-Aug are the busiest months.
Sep to mid Dec is almost dead.
Christmas/New Year is full.
Jan & Apr to mid June fall in-between.

I have a hotel in Cabarete. May is our slowest month but august is actually our second busiest. Still I don't think you will have a problem finding someting to your likeing.
