Default South West Travel Plans

Hello, First off I would like to thank all off the folks here for such a wealth of info. I will be travelling to the DR the end of March for 2 weeks and I would like to spend 5-6 days in the South west.

My general plan is the Fly into Santo Domingo, rent a small SUV (By the way I will be with my wife and 2 children) I plan to drive that day to somewhere south of Barahona, Sounds like just south of there is nice. (PLayaazul??)

I then plan on driving towards Pedernales (best place to stay with kids) and spend 2 days to get to Bahia las Aguilas and the mountains. Lago Enrico ?? I think sounds great.The area sounds spectacular.

First question is 5-6 days enough??
With that Kinda Time what are the not to miss places.
Will it be a problem to drive to Bahia Las Aguilas
What is the best map to get of the DR.(Most current)
best confy places to stay in the region
any other advice, good beaches for kids and dangerous beaches, hiking trails to remote waterfalls etc. Thanks so much.
Oh yea we are mostly vegetarian, Is that going to be really hard?
